these cookies were billed as "breakfast cookies" in the original recipe. I tweeked them to be a bit healthier, more flavourful, and nut-free for school. they are a bit crumbly after all morning in a lunchbox, so i individually wrapped them in a bit of waxed paper and keep them in the freezer. they thaw by lunch no problem. they are tasty and full of calcium and protein- while being dairy free.
here's the recipe:
Lunchbox Cookies
- makes 2 dozen, 350º oven
- 1 cup oats
- 1 cup orange juice
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 cup sugar
- 2 eggs
- 1/4 cup canola oil
- 1/4 cup molasses
- 1/4 cup sunflower seed butter
- 1/2 cup pepitas (pumpkin seeds) (more if you want)
- 1 cup chopped dates
- 1/2 cup sesame seeds
- mix oats and o.j. - soak for 1/2 an hour
- mix together 'dry' ingredients
- mix together 'wet' ingredients
- mix gently wet, dry, seeds and dates
- drop by 1/4 cup heap onto greased or nonstick baking sheets
- bake for about 15 minutes until they're slightly golden

(by the way- is your kid's school nut-free? did you know you can use sunflower butter instead of peanut or almond butter and it's okay because it's a seed not a nut? bring back the PB+J, I mean SFB + J!)
